Colin Reunion

Colin reunited with New Colin in Vancouver two weekends ago. The two caught up over sightseeing, good conversation, and tasty food. They had a great time at the Vancouver Art Gallery. The Monet exhibit was a real treat.

They also enjoyed walking along the waterfront. From the photo above, can you tell which Colin is which?

The Big Screen

SN has been taking great care of New Colin! We went to Cineplex last week to see Wonder Woman. You can't tell from the photo (we took it before the movie started), but it was really good! New Colin gives it two thumbs up!

Double Vision

We're super excited to be a monster host! Our new monster friend happens to look very similar to Colin. Our Colin on the right thought he was looking into the mirror. Naturally the two Colins hit it off.

New Colin is excited to meet people in different places around the world! He came prepared with his trusty passport.

We have a trip planned for new Colin later on the month. Adventure is out there!

Games Night

Q and his pals are having a good old fashioned games night. I found them playing an intense game of Cranium. I wonder who will win?

Merry Christmas!

Ho, ho, ho! Merry Christmas!

Wishing you all the hope, wonder, and joy that the holiday season can bring!

Remember my dad's snowmen collection? Well, Hallmark has him hooked so of course he bought the latest and greatest for this year. The Quatchis liked the baking theme of the 2015 snowman.

The Quatchis are spoiled from friends near and far. Thank you, Sophia, for the Saje, tea cup, and tea infuser!

And thank you, Lauren, for the Duchess tea and Starbucks mug!

We are so grateful for the friendships we have made via the blog. You're the best!

A Package from the Middle East

Q and the Mins are spoiled by Sophia, their incredible friend from afar! The Quatchis cherish her gifts, many of which are homemade.

They have never received anything from the Middle East before so this was a real treat. Thanks for the unique travel mug, Sophia! We've been putting it to good use already!

The Monster Factory

Maggie, Colin, and Spencer come from the good people of Monster Factory. They have been top notch additions to our band of friends. We love them very much!

Maggie and Colin were asked by my cousin in Hong Kong to find her Buddy. So they joined me on Saturday when the company was hosting a retirement party for some of their monsters. Maggie and Colin were not made on-site so they've never been to the studio before. It was my first time too!

Here's Maggie and Colin with some of the big guys.

Oh, there's Buddy! Let's bring him home.

Farewell fellow monsters! These guys are some of the classics and are no longer in production. Lots of them were scooped up to go to good homes.

Buddy wanted to say goodbye to the guys hanging out in the back. Maggie and Colin were happy to meet some of the Mythicals, the same line of monsters that Spencer is from.

I'm sure we'll be coming back to the Monster Factory in the future. Like they said...you can never have too many friends!

Knock Knock!

Look who arrived! It's Spencer from Monster Factory, and he's ready to move in!

Snowman showed him where to unpack his belongings...

...and then introduced him to the friends! Maggie and Colin are out and about but knew Spencer was coming. Welcome, Spencer!

Coconut Snowballs

Even though we Torontonians are ready to say goodbye to this cold weather, Q's buddy, the Snowman, is gonna miss his favourite season. To cheer up the Snowman, Q and I baked snowballs. Coconut snowballs!

Coconut Snowballs
1 3/4 cups unsweetened shredded coconut, divided
2 teaspoons melted coconut oil
3 tablespoons maple syrup
2 tablespoons unsweetened coconut milk
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/8 teaspoon sea salt

Place 1 cup of shredded coconut in a food processor along with the coconut oil. Process on high speed, scraping down the sides periodically, until it reaches a paste-like consistency.

Add the maple syrup, coconut milk, vanilla, cinnamon, and salt and process until well combined. Add 1/2 cup plus 2 tablespoons of shredded coconut and pulse until just combined.

Shape the mixture into 12 (1-inch) balls and coat with the remaining shredded coconut. Refrigerate for at least an hour and up to 5 days. Bring to room temperature before eating.

There were a lot of firsts with this recipe - first time using a food processor, first time baking with coconut, and first time using coconut oil. It was also my first time baking something gluten-free, nut-free, and vegan. I am using the term "baking" loosely. As you can see from above, no baking required!

Keeping in touch

While I was in Asia this past summer, I made a lot of great friends. One of them is from New Zealand. Even though he's across the globe, we still manage to keep in touch fairly regularly. I always look forward to our bi-weekly Skype dates. We usually talk for hours on end.

Q and Mini Q also made a good friend while in Taiwan and HK - Cabbie! They really enjoy Skyping with her, and can't wait to see her again one day.

Big shout out to our NZ friends! Wo men xiang ni men!
