Packing, packing, packing

Q is helping me pack for our next big adventure. He will be meeting some family on my mum's side for the very first time so he's super excited. Those Paul Frank pajamas he's folding are for my cousin's two boys. He's bringing his trusty backpack that Sophia made for him, as well as the red polo from my mum. We leave next Thursday. Can't wait!

Baking with Conan and Frankie

Conan and Frankie were in town (with AHD), so with Q, the three of them made AHD's favourite cookies.

Lovin' Scoopfulls Chocolate Chip Cookies
2 cups milk chocolate chips
1 cup lightly packed brown sugar
1 cup granulated sugar
1 cup non-hydrogenated margarine
2 large eggs
1 teaspoon pure vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda

Set aside 1/3 cup chocolate chips.

In large mixing bowl, using wooden spoon, beat sugars and margarine until creamy. Stir in eggs, vanilla, and remaining 1 2/3 cups chocolate chips. Add flour, salt, and baking soda. Stir until well mixed.

Drop batter by small ice cream scoops (scant 1/4 cup) on non-stick cookie sheets (6 to 8 per sheet). Bake, in batches, in preheated 325 F oven 11 to 14 minutes, or until edges are lightly browned. Cool 10 minutes on cookie sheet. Transfer cookies to wire rack to cool completely. Store in airtight container.

Makes about 24.

The group baking project was a success! AHD's co-workers really enjoyed them. I'm glad Q had two opportunities to bake this month. We're still on track to trying a different baking recipe every month for 2010!

Conversation with Grandma

My 96 (soon to be 97) year old grandma and Q

Sammers: (Waves Q's hand at Grandma) He's from the Vancouver Olympics.
Grandma: He's cute! Very cute...

Sammers: (Gives Q to Grandma) His name is Quatchi.
Grandma: He must be very soft when you hug him.

Grandma: (Fixes Q's fur) What's this (pointing to Q's facial hair)?
Sammers: It's his beard.

Grandma: His feet are so big!
Sammers: Those are his boots.

Hehe! I love my grandma. We took her out for dim sum on the weekend. I was hoping to get some shots of Q enjoying some Cantonese cuisine but we were already half way through the meal by the time I remembered. After lunch, my brother and I waited in the car with my grandma while my mum grabbed a few groceries. This is where the above photo was taken.

Cross Border

On Saturday, my mum, Q, and I went on an impromptu cross border shopping trip. Here's Q in the car, approaching the Canada-US marker on the Lewiston-Queenston Bridge. Don't worry, I wasn't driving and taking this picture at the same time!

Though we left early, Fashion Outlets was packed! Most of the cars in the parking lot were from Ontario.

I always like to stock up on odds and ends at Target. Here's Q travelling in style in my Longchamp bag.

After lots of walking (and unfortunately, not too many good shopping finds), Q feasted on some all American fare. It was nice to spend some quality time with my mum and Q. I hope everyone is having a great weekend so far!

Q Goes Vegan

My best friend, KNN, is a vegan, and her boyfriend, R, loves brownies. So when KNN was hosting a campfire last night in celebration of R's birthday, it was only fitting that Q and I made vegan brownies!

Vegan Brownies
2 cups unbleached flour
2 cups unbleached sugar
3/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon salt
1 cup water
1 cup vegetable oil
1 teaspoon vanilla extract

Preheat the oven to 350 F. In large bowl, stir together flour, sugar, cocoa powder, baking powder, and salt. Pour in water, vegetable oil, and vanilla; mix until well blended. Spread evenly in a 9x13 inch pan.

Bake for 25 to 30 minutes until the top is no longer shiny. Cool for at least 10 minutes before cutting into squares.

This recipe was easy peasy! I had to bake my batch for 50 minutes because my pan was smaller. It was still gooey in the centre, which was perfecto! The brownies were a big hit! Q and I will probably try this recipe again.

Happy (belated) birthday, R!
