Orange Almond Tuiles
2/3 cup all-purpose flour
1 cup confectioners' sugar
1 cup slivered almonds
1 egg
2 egg whites
2 to 3 teaspoons of grated zest of orange
3 tablespoons of melted butter
Preheat oven to 400F. Grease 2 baking sheets with butter. Sift flour and sugar together and stir in almonds. Add egg and egg whites to dry ingredients, and stir to combine. Add orange zest and melted butter.
Spoon walnut-sized amounts of dough onto the baking sheets and flatten with the back of a fork dipped in cold water. Bake for 4 to 5 minutes until pale with a darker golden brown edge.
When completely cool, store in an airtight container for 3 to 4 days, or in the freezer for 3 to 4 weeks. Makes 3 dozen.
